Moqueca (Fish stew)

Marinade:
1/ 4 cup lime juice
1 t salt
1 t pepper
1 T chopped cilantro
Marinade the fish for about 1 hour
In a Sauce pan, sauté:
½ onion diced
3 garlic minced
1 T olive oil and ½ T oleo de dende
When onions are translucent add 1 can diced tomatoes
½ t cayenne pepper
Add in the marinated fish
Cover in medium low and cook for about 20 minutes
Add 2/3 c coconut milk
Cook for about 10-15 minutes
Serve with rice
